- 4.6667 lb Elbow Macaroni
- 2.3333 cup Unsalted butter
- 1.1667 cup All-Purpose Flour
- 7 cup Whole Milk
- 11.6667 cup Half and Half
- 18.6667 cup Sharp Cheddar Cheese (divided)
- 9.3333 cup Gruyere Cheese (divided)

- 1.1667 tsp Smoked Paprika (optional, for added flavor)
Instructions
- Cook the Pasta — Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until just al dente. Drain, rinse with cold water to stop cooking, and set aside.
- Make the Roux — In the same pot, melt the butter over medium heat. Sprinkle in the flour and whisk constantly for about 1-2 minutes to create a smooth, golden paste (roux). This will help thicken the sauce.
- Add Dairy to Form Sauce — Gradually pour in the milk and half and half while whisking to blend smoothly with the roux. Continue cooking for about 5 minutes, until the sauce thickens and begins to simmer gently.
- Incorporate Cheese — Remove the pot from heat and stir in 3 cups of cheddar and 1 ½ cups of Gruyere cheese. Mix until melted and the sauce is creamy. Season with salt, pepper, and smoked paprika, adjusting to taste.
- Combine with Pasta — Add the cooked macaroni back into the pot with the cheese sauce. Gently stir until each piece of pasta is well-coated in the creamy cheese sauce.
- Prepare for Baking — Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish, spreading it evenly. Sprinkle the remaining cheddar and Gruyere on top for a golden finish.
