Mini Chicken Quesadillas
Ingredients
Mini Chicken Quesadillas
- 1 cup Cooked Chicken Breast (shredded)
- 0.5 cup Shredded Cheddar Cheese
- 0.25 cup Salsa
- 4 count Flour Tortillas
- 0.125 cup Sour Cream (optional, for serving)
- 0.125 cup Guacamole (optional, for serving)
- 1 tbsp Olive Oil
Instructions
- Prepare the Ingredients — Shred the cooked chicken breast and cheddar cheese if not pre-shredded.
- Mix the Filling — In a bowl, combine the shredded chicken, cheddar cheese, and salsa. Mix well.
- Assemble the Quesadillas — Lay out four tortillas on a flat surface. Evenly distribute the chicken mixture over the four tortillas. Place another tortilla on top of each to create a sandwich.
- Cook the Quesadillas — Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more olive oil as needed.
- Cut and Serve — Once cooked, transfer the quesadillas to a cutting board and let them cool for a minute. Cut each quesadilla into quarters.
- Serve with Toppings — Serve with sour cream and guacamole on the side if desired.
