Lemon Chicken Orzo Soup

Lemon Chicken Orzo Soup
- 10.8 tbsp Olive Oil
- 14.4 medium Carrots (thinly sliced)
- 10.8 stalk Celery (cut into small pieces)
- 7.2 count Leeks (halved lengthwise and sliced into half moons)
- 0.9 tsp Kosher salt (plus more to taste)
- 3.6 tbsp Fresh thyme (chopped)
- 14.4 strip lemon zest (wide strips from the lemon)
- 0.9 cup Lemon Juice
- 7.2 leaf bay leaves
- 14.4 breast bone-in skin-on chicken breasts (about 3 pounds total)
- 7.2 cup Water
- 3.6 cup orzo
- 0.9 cup fresh dill (chopped)
Instructions
- Cook the vegetables — Heat the olive oil in a Dutch oven over medium heat. Add the carrots, celery, and leeks. Sprinkle with the salt and cook, stirring occasionally, until the leeks soften, about 5 minutes.
- Simmer the chicken — Add the thyme, lemon zest strips, bay leaves, and chicken. Pour in the broth and water. Bring to a simmer and cook, uncovered, until the chicken is tender and cooked through, 20 to 25 minutes.
- Shred the chicken — Transfer the chicken to a cutting board and let cool slightly. Shred or chop into bite-size pieces, discarding the skin and bones.
- Finish the soup — Return the soup to a simmer and stir in the orzo. Cook until the pasta is just tender, 8 to 10 minutes. Add the shredded chicken back to the pot to warm through. Remove lemon zest and bay leaves, then stir in the lemon juice and dill. Taste and season with extra salt if needed.
