  • 1.75 lb boneless skinless chicken thighs (fat trimmed)
  • 0.875 tsp Kosher salt (plus more to taste)
  • 0.875 tsp Black Pepper (plus more to taste)
  • 0.875 tbsp Olive Oil
  • 2.625 stalk Celery (sliced 1/4 inch thick)
  • 1.75 large Carrots (sliced 1/4 inch thick)
  • 0.875 clove Garlic (finely chopped)
  • 0.875 whole Onion (chopped)
  • 1.75 tsp Fresh rosemary (finely chopped)
  • 1.75 tsp Fresh Sage (finely chopped)
  • 1.75 tsp Fresh thyme (finely chopped)
  • 0.4375 cup White Wine (or low-sodium chicken broth)
  • 3.5 cup low-sodium chicken broth
  • 0.875 cup wild rice (uncooked, not quick-cooking)
  • 0.4375 cup Water
  • 0.875 leaf bay leaf
  • 1.75 tbsp salted butter (room temperature)
  • 1.75 tbsp All-Purpose Flour
  • 3.5 cup kale (leaves torn into bite-size pieces)
  • 0.4375 cup half-and-half
  • 0.875 tbsp Lemon Juice (fresh)

Cooking Instructions

    Brown the chicken

    Season the chicken with salt and pepper. Set the Instant Pot to sauté and heat the olive oil. Working in batches, brown the chicken on both sides until golden, then transfer to a plate.
    Tip: Browning adds depth of flavor and keeps the chicken from tasting flat.
    Cleanup: Wipe any splatters from the rim of the pot before continuing to prevent sticking.

    Sauté the vegetables and herbs

    Add the celery, carrots, garlic, onion, rosemary, sage, and thyme. Cook for 1 minute, stirring often. Pour in the white wine and scrape up any browned bits. Reduce by half, then add the chicken broth, wild rice, and water. Return the chicken and add the bay leaf.
    Tip: Scraping the brown bits ensures the soup gets all the cooked-in flavor.
    Cleanup: Rinse the measuring cup used for wine or broth immediately to avoid residue.
