    Prepare Potatoes

    Wash, peel (optional), and slice the Yukon Gold potatoes into ¼-inch sticks. Pat them dry with paper towels to remove excess moisture.

    Start Frying

    Pour vegetable oil into a large Dutch oven until it's about 2-3 inches deep. Place the sliced potatoes in the pot, ensuring they are fully submerged. Turn the heat to high.
    Tip: Starting in cold oil helps the potatoes cook evenly and prevents them from sticking.

    Cook to Golden Brown

    Once the oil begins to bubble, let the potatoes cook undisturbed for 15 minutes. Afterward, gently stir to loosen any that may have stuck. Continue cooking until they turn golden and crispy, about another 10-15 minutes.

    Drain and Season

    Use a slotted spoon to remove the fries from the oil, placing them on paper towels or a baking rack to drain. Season with kosher salt to taste.
    Cleanup: Allow the oil to cool completely before discarding or storing for future use.
