Chicken Alfredo Soup
Ingredients
Chicken Alfredo Soup
- 0.75 tsp Kosher salt
- 4.5 tbsp salted butter
- 1.5 count Onion (chopped)
- 4.5 count Garlic cloves
- 0.375 cup All-Purpose Flour
- 6 cup low-sodium chicken broth
- 1.5 cup Heavy Cream
- 6 oz fettuccine (broken into 2-inch pieces)
- 4.5 cup broccoli florets
- 3 cup cooked chicken (chopped)
- 0.375 cup Fresh Parsley (chopped)
- 0.75 cup Parmesan Cheese (grated)
- 1.5 tbsp fresh lemon juice
- count Red pepper flakes (to taste)
Instructions
- Start the base — Bring a large pot of salted water to a boil. In a separate Dutch oven, melt the butter over medium-low heat. Add the onion and cook until softened, then stir in the garlic. Sprinkle in the flour and cook until smooth and lightly thickened.
- Build the broth — Pour in the chicken broth, heavy cream, one cup of water, and the measured salt. Bring the mixture to a gentle simmer and cook until slightly thickened.
- Cook pasta and broccoli — Add the broken fettuccine to the boiling water and cook until al dente. Add the broccoli to the same pot during the last three minutes of cooking. Drain well and stir the pasta and broccoli into the soup along with the chicken.
- Finish and serve — Return the soup to a simmer to heat the chicken through. Remove from heat and stir in parsley, parmesan, and lemon juice. Add red pepper flakes if desired.
